Crockpot Creamy Tomato Basil Chicken

Ingredients
- 4-6 Chicken Breasts or Boneless Skinless Chicken Thighs
- 14.5 oz Diced Tomatoes
- 8 oz Tomato Sauce
- 1 cup Heavy Cream or Half & Half
- 2 tbsp Cornstarch
- 3 tbsp Gourmet Garden Basil Stir-In Paste
- ½ tbsp Red Pepper Flakes
- Salt and Pepper (to taste)
Instructions
- Add diced tomatoes, tomato sauce, basil paste, red pepper flakes, salt, and pepper to crockpot.
- Whisk cornstarch and heavy cream, then add to crockpot. Stir to combine.
- Place chicken breasts or thighs in a single layer in crockpot and cover with sauce.
- Cook on high for 4 hours or on low for 6-8 hours. Chicken is done when the internal temperature has reached at least 165°.
- Remove chicken from crockpot and set aside.
- Use immersion blender in the sauce until smooth. (Or, pour sauce into a blender until smooth).
- Add chicken back to crockpot for 5 minutes.
- Serve and enjoy!
