What goes with a lake day better than a delicious cocktail? We just got back from a camping trip up at Union Valley Reservoir in Northern California with family and had the most wonderful lake day. We kicked it off with these big batch daiquiris. Best part about this recipe? Well, there are two: it is ridiculously easy and it involves all of 3 ingredients. We chose to make a big pitcher of these since there were 6 of us, and in total it made 8 drinks (so we each got toppers). A word to the wise: these are not weak cocktails. If you’re looking for a slightly less strong version of this, you could fill your glass halfway with the daiquiri and top with soda water.
First you’ll pour a whole fifth of dark rum into the pitcher, then add lime juice and simple syrup, then stir and top with ice. While enjoying these at the beach we were brainstorming ways to enhance this classic recipe. We all decided some muddled fruit might be tasty, so that might be a future post!

- 1 Pitcher
Ingredients
- 750 ml Dark Rum (not spiced)
- 6 oz Simple Syrup
- 6 oz Lime Juice
Instructions
- Pour entire bottle of rum into pitcher.
- Add lime juice and simple syrup.
- Fill pitcher halfway with ice and stir until combined.
- Pour and enjoy!
