We spent the weekend down in Aptos, CA celebrating our friend’s birthday and enjoying lots of adult beverages and delicious food. One of the culinary highlights of the trip was an asparagus side dish that was served with New York strip sandwiches on Friday afternoon.
Tonight I wanted a quick, easy, and tasty side dish to pair with blackened swordfish and mashed potatoes. I could not stop thinking about Friday’s asparagus – so, voila! The flavor combination of the melted butter, lemon juice, and smoked paprika tasted so fresh and left me wanting more. Hope you enjoy!
Grilled Asparagus with Lemon Paprika Butter

Ingredients
- 12 oz Fresh Asparagus
- 2 tbsp Melted Kerrygold Butter
- ½ Juiced Lemon
- 1 tsp Smoked Paprika
- Salt & Pepper (to taste)
Instructions
- Melt butter in a small bowl.
- Add lemon juice, smoked paprika, salt, and pepper to the butter and stir.
- Toss asparagus in butter mixture and place on grill tray.
- Grill at 400° for 10 minutes, turning asparagus halfway through.
- Remove from grill and enjoy!

Note: I used thin asparagus in this recipe. If using thicker stocks, add grill time as needed (likely 5 minutes).
