Skirt Steak and Veggie Brunch Bowls

What better way to kick off the weekend than to chef up a delicious brunch?! We marinated skirt steak overnight in the Lawry’s Baja Chipotle marinade, air fried sweet potatoes and broccoli, and topped with a fried egg and homemade tortilla chips. And, served the bowls with a delicious tangerine mimosa. It is the weekend, after all!

This recipe is fun because you get the subtle Mexican flavors from the Baja Chipotle skirt steak and adobo seasoned sweet potatoes. It is incredibly versatile and can be customized to suit your flavor preferences! I added a little green sauce to mine, and Kevin omitted the broccoli (not a green veggies guy). Next time I will add some diced cilantro for that fresh herb element and maybe some fresh pico de gallo.

I cooked the skirt steak in the cast iron skillet first so that it had time to rest. Then, I air fryed the sweet potatoes and broccoli and added to our bowls. Fried egg went last so the yolk was nice and hot/runny and combined with the other flavors. Delish!

Skirt Steak and Veggie Brunch Bowls

Enjoy these delicious and filling brunch bowls loaded with protein, veggies, and subtle Mexican flavors!

Equipment

  • Cast Iron Skillet
  • Air Fryer
  • Non-Stick Pan

Ingredients
  

  • 1 lb Skirt Steak Marinaded overnight in Lawry's Baja Chipotle
  • 1 ½ cup Diced Sweet Potatoes
  • 1 cup Frozen Broccoli
  • 2 Eggs
  • 2 tbsp Avocado Oil
  • 1 tsp Adobo Seasoning
  • Salt & Pepper to taste

Instructions
 

  • Add diced sweet potato to a mixing bowl and add 1 tbsp avocado oil and 1 tsp adobo seasoning. Mix and set aside.
  • Add broccoli to a mixing bowl and add other 1 tbsp avocado oil. Add salt and pepper to taste. Mix and set aside.
  • Drizzle oil into cast iron skillet. Turn stove burner to medium-high heat. Add skirt steak and cook until done (3-4 minutes total). Remove from skillet, cover with foil, and let rest.
  • Add sweet potatoes to air fryer and cook at 400° for 7 minutes.
  • Shuffle sweet potatoes and add broccoli. Cook for another 7 minutes.
  • Add skirt steak, sweet potatoes, and broccoli to bowls.
  • Heat non-stick pan on stove over medium heat. Crack each egg into the pan and add salt & pepper to taste. Once egg whites are no longer translucent, use spatula to carefully flip. Egg is done when the yolk reaches your desired texture.
  • Add one fried egg to each brunch bowl and serve.
