Smoked Boneless, Skinless Chicken Thighs

On Sundays that we don’t have plans, we’ve started doing meal prep to set ourselves up for the following work week. Using the smoker to meal prep our protein is our favorite technique right now! These chicken thighs were super easy and we love the versatility of them to incorporate into various lunch and dinner ideas. You may have picked up on “versatility” as a recurring theme on our site. 😉 It’s all about working smarter, not harder!

These chicken thighs truly could not be simpler: season, smoke, enjoy. We used the Trader Joe’s BBQ 101 seasoning because we happened to have some on hand, but feel free to use any seasoning you love! Place the chicken thighs on the smoker, then about halfway through the cook time add a little drizzle of chicken broth to keep them nice and juicy. After about 3.5 hours, you are ready to remove and let rest! Super important that the internal temperature reaches at least 165 degrees. We like to reach 170 degrees – better to be safe than super sick!

Smoked Boneless, Skinless Chicken Thighs

Enjoy this simple smoked chicken thigh recipe. Loaded with delicious smoky flavor and still moist!

Ingredients
  

  • 2 lb Boneless, Skinless Chicken Thighs
  • 1 tbsp Trader Joe's BBQ 101 Seasoning Can substitute any seasoning you prefer!
  • 1 tbsp Avocado Oil
  • 2 tbsp Chicken Broth

Instructions
 

  • Prep smoker and set to 225°.
  • Toss chicken thighs in avocado oil and season with Trader Joe's BBQ 101 seasoning.
  • Lay chicken thighs out flat on rack in smoker. Insert a temperature probe into the center of the thickest chicken thigh.
  • After 1 ½ hours, spoon a small amount of chicken broth onto each chicken thigh to help retain moisture.
  • Cook chicken thighs until internal temperature reaches 165-170°.
  • Once chicken thighs have reached at least 165° internally, remove from smoker and let rest on a plate covered in foil for 10 minutes.
  • Serve and enjoy!

Notes

Note: You can use whatever seasoning you have; classic salt & pepper still turns out amazing! You can also make your own BBQ seasoning with some smoked paprika, chili powder, garlic powder, salt, pepper, and cumin.
