Smoked Brisket

It is incredibly difficult to find a good price on brisket in Northern California. We were thrilled when we found a 2 lb. brisket at our local grocery store for ~$20 and had to snag it! We have a little fomo when we see all of our Twitter friends in other parts of the country constantly posting their beautiful smoked brisket pictures. Now, it is our turn!

We will preface this recipe by saying that patience is a virtue. We smoked this brisket in the backyard on a lovely 80 degree Sunday watching football, so we had the time to wait for it to cook. Please don’t try to rush this recipe by setting your smoker higher than 225-250 degrees – you won’t get the beautiful pink smoke ring if you try and cut corners. Sit back, relax, start it early, and reap the benefits once this has finished cooking.

Two important components of this recipe: the spritzing/mopping and the wrap. You will end up with a dried out piece of meat if you do not add moisture during the cook. We got a plastic spray bottle that we added apple cider vinegar to which makes the spritz every half hour really easy. We read online that some people also mop with Worcestershire a few times throughout their cooks, so we employed that too and it paid off! It is also super important to wrap the brisket in foil (which we used) or butcher paper (which we just ordered on Amazon). Wrapping the brisket not only helps develop that beautiful bark but it helps retain the moisture. Don’t skip these steps!

Smoked Brisket

This simple recipe for a smaller cut of brisket yields an incredible meal!

Equipment

  • Pellet Smoker

Ingredients
  

  • 2 lb Brisket
  • 2 tbsp Brisket Rub (or salt and pepper combination)
  • 1 tbsp BBQ Rub
  • Apple Cider Vinegar
  • Worcestershire Sauce

Instructions
 

  • Preheat pellet smoker to 225°.
  • Use Brisket Rub and BBQ Rub to coat the brisket evenly. Allow the brisket to come up to room temperature.
    2 lb Brisket, 2 tbsp Brisket Rub (or salt and pepper combination), 1 tbsp BBQ Rub
  • Insert temperature probe into center of brisket and lay flat on smoker rack.
  • Every 30-40 minutes, spray or mop about 1 tsp of Apple Cider Vinegar evenly on brisket.

  • Every 2 hours, spray or mop about 1 tsp of Worcestershire sauce evenly on brisket.
    Worcestershire Sauce
  • When the brisket reaches 160° internally, wrap in foil or butcher paper and place back on smoker.
  • Brisket is done when it reaches 200° internally. Remove from smoker and let rest for 1 hour.
  • Slice and enjoy by itself or with BBQ sauce!
