Update: In my opinion, it’s not baking if you don’t try to constantly improve your recipes. This is one where I did just that! I turned this recipe from a “breakfast cake” that was really dense into your standard “loaf”. It is sooo tasty now. I also swapped out the buttermilk for Greek yogurt. Still booming with delicious strawberry and chocolate flavors! So, if you previously used this recipe, try this new one – it is so much better! 🙂Â
We bought the most incredible strawberries at Trader Joe’s this week and I was determined to bake something delicious with them. Today was a busy day working from home and I had leftovers to reheat, which freed my lunch break up for some culinary creativity. Piecing together the random ingredients we happened to have in our kitchen, I created this recipe!
I absolutely love the combination of strawberries and chocolate – so the chocolate chips were a no brainer. What I enjoy about this loaf is that it is not overly sweet, yet is packed with flavor and super filling. I would highly recommend serving this with some whipped cream on top. As a matter of fact, I have homemade whipped cream chilling right now.
This recipe is also quite simple. Mix the ingredients, then pour into your loaf tin, then bake and enjoy! I am going to continue experimenting with this recipe and would love feedback if you make it!
Cheers!
