We think everyone can agree – sometimes you just need a big, chewy, delicious chocolate chip cookie. One (first world) problem we have is at the same time, not being trustworthy enough to have a whole 2-3 dozen batch of cookies in the household. One of the pros of this recipe is that you get your full cookie fix with only ONE dozen cookies. Problem solved (right)? 😉
There are two critical components of this recipe. First, in order to have the fluffy chewy texture you need to include some vanilla pudding mix. No, you’re not pouring pudding into the dough (although that could be tasty too). This recipe calls for dry vanilla pudding mix. Something about it makes these cookies like little pillows of goodness.
The other critical component is allowing the dough to chill. We realize it’s hard to chill when you can’t snack on cookie dough bites, but it is a true test of patience. If you can believe it, we left the dough in the fridge overnight untouched in an effort to make the best cookies to showcase for you all. It sure paid off – rather than flat cookies with room temperature dough, these baked perfectly round. Hence, the need to not skip this step in the recipe.
Feel free to double the batch (or even triple, quadruple) to your heart’s content. Everyone needs comforting cookies once in awhile!

Giant Chewy Chocolate Chip Cookies
Ingredients
Dry Ingredients
- 1 ¼ cups White Flour
- ½ tsp Baking Soda
- pinch Salt
- 6 tbsp Brown Sugar
- 4 tbsp White Sugar
- ½ box Vanilla Instant Pudding Mix
Wet Ingredients
- 1 Egg
- ½ cup Butter, softened
- 1 tsp Vanilla Extract
- ½ tbsp Canola Oil
Mix-In
- 1 cup Semi-Sweet Chocolate Chips
Instructions
- Combine all wet ingredients in a large mixing bowl. Stir until mixture is smooth.1 Egg, ½ cup Butter, softened, 1 tsp Vanilla Extract, ½ tbsp Canola Oil
- Combine all dry ingredients in a medium mixing bowl.1 ¼ cups White Flour, ½ tsp Baking Soda, pinch Salt, 6 tbsp Brown Sugar, 4 tbsp White Sugar, ½ box Vanilla Instant Pudding Mix
- Stir to combine so that a smooth dough forms.
- Gently fold in the chocolate chips with a spatula.1 cup Semi-Sweet Chocolate Chips
- Cover mixing bowl with plastic wrap and freeze for 1 hour.
- Pre-heat oven to 350°.
- Divide and roll cookie dough into 12 balls. Place cookie dough balls in 4 rows of 3 on a cookie sheet lined with parchment paper.
- Bake for 15-18 minutes until golden brown. (Note: All ovens run different. We recommend checking at 10 minutes to ensure they don't overcook)
- Remove from oven, let cool for 15 minutes, and enjoy!
