We love quick and easy dinners during the work week. We both work your standard 40 hour Monday through Friday schedule, and a lot of nights we are wiped out from a busy day of critical thinking and problem-solving. One of our favorite parts about having a smoker is how easy it makes cooking! Tonight we knew we wanted tilapia, but didn’t know how to prepare it. Kevin recommended testing it out on the smoker, and off we went!
Lawry’s Sesame Ginger marinade is one of our favorites for chicken, pork, steak, salmon – you name it. We thought it might go well with our smoked tilapia, and it did! Brush a tablespoon of the marinade on a tilapia fillet, sprinkle with red pepper flakes (if you like spicy), and then let it go on the grill. We were absolutely shocked at how incredible this turned out (and also immediately took to the computer to write this post).
This is a new weeknight regular in our house, and we recommend that you make it one in yours! We served it over white rice with air fried broccoli. Add a squeeze of lemon (hit it with some acid, for all you Food Network fans) and maybe a drizzle of soy sauce, and enjoy a fantastic meal.
Cheers!
