Sweet Potato & Sausage Brunch Casserole – Two Ways!

We’ve mentioned before how much we love both meal prep and brunch casserole. This is another recipe that combines our love of both! The two of us have slightly differing tastebuds at times: one of us doesn’t like cheese, and the other doesn’t like green leafy vegetables. Our common ground on this recipe is the sweet potato and sausage! That’s why we’re sharing this recipe two ways – one for each of us.

One thing to note here is that this recipe can easily be a base for others! We’ve talked about doing a taco version which could be fun. Feel free to improvise and include mix-ins that you enjoy. Let us know what you think!

Sweet Potato, Sausage & Egg Brunch Casserole

Our favorite choose-your-own-adventure casserole! Mix in your favorites, bake, and enjoy.

Ingredients
  

  • 1 cup Ground Breakfast Sausage
  • 1 cup Diced Sweet Potato
  • 1 cup Spinach optional
  • 1 cup Shredded Cheese optional
  • Salt & Pepper to taste
  • 5 Eggs
  • ½ cup Heavy Cream

Instructions
 

  • Cook ground breakfast sausage in a skillet. Set aside.
  • Preheat oven to 425°. Peel and dice sweet potato. Bake in an even layer on a greased baking sheet for 18 minutes. Set aside.
  • Decrease oven temperature to 350°.
  • Chop spinach (if using). Set aside.
  • In a mixing bowl, add eggs and heavy cream. Whisk to combine.
  • Grease a 9×9 baking dish and add sausage, sweet potato, spinach (if using), and cheese (if using). Sprinkle salt and pepper to taste.
  • Bake for 30 minutes until egg mixture is settled.
  • Let cool for 10 minutes. Slice, serve, and enjoy!
