Sweet Potato, Sausage & Egg Brunch Casserole

- 1 cup Ground Breakfast Sausage
- 1 cup Diced Sweet Potato
- 1 cup Spinach optional
- 1 cup Shredded Cheese optional
- Salt & Pepper to taste
- 5 Eggs
- ½ cup Heavy Cream
Cook ground breakfast sausage in a skillet. Set aside.
Preheat oven to 425°. Peel and dice sweet potato. Bake in an even layer on a greased baking sheet for 18 minutes. Set aside.
Decrease oven temperature to 350°.
Chop spinach (if using). Set aside.
In a mixing bowl, add eggs and heavy cream. Whisk to combine.
Grease a 9x9 baking dish and add sausage, sweet potato, spinach (if using), and cheese (if using). Sprinkle salt and pepper to taste.
Bake for 30 minutes until egg mixture is settled.
Let cool for 10 minutes. Slice, serve, and enjoy!
