Sweet & Spicy Smoked Pork Belly Bites

Who else loves smoked pork belly as much as we do?! We got a great deal on some sliced pork belly from Costco and declared that this recipe would be the first thing we made on our new Pit Boss smoker. This recipe absolutely did not disappoint – and more importantly, it was shockingly simple. We love simple. 😉 We have already declared that this recipe will be one of the first we make this Fantasy Football season! We took concepts from one of Malcolm Reed’s awesome Youtube videos and made it our own with ingredients we happened to have on hand.

Here’s the play-by-play on how to make this deliciously flavorful main course or appetizer! 

First, you’ll want to dice your pork belly into about 1 inch cubes. Totally works if they aren’t that exact size – the ultimate goal is to have them bite-size and they shrink a bit when they cook.

Next, make sure to thoroughly coat the pork belly with BBQ seasoning. We used our favorite Killer Hogs BBQ Rub but you can use any BBQ rub or make your own! The BBQ 101 seasoning from Trader Joe’s would also be great here. The trick is to let the pork belly bites sit in the seasoning for about a half hour.

After seasoning, it is time to go on the smoker! For less mess, use a wire rack and place the pork belly bites evenly across. Place something under the tray to catch the drippings to avoid a huge mess (we happened to have aluminum trays, but a baking sheet would also work).

After the seasoned pork belly has reached an internal temperature of 165 degrees, it’s time to add the sauce! Add 1/3 cup of the BBQ sauce blend (included in the recipe card down below) an aluminum pan and then add each pork belly bite. Toss to coat evenly and add 1/3 cup more sauce every 30 minutes until the sauce is gone.

Remove from the smoker and let rest for as much time as you can resist not digging into them. Full disclosure: We sampled immediately. We’ll work on will-power another day!

Sweet & Spicy Smoked Pork Belly Bites

This sweet and spicy pork belly bites recipe is incredibly simple, full of flavor, and sure to be a hit at your next party!

Ingredients
  

  • 1 ½ lb Pork Belly
  • 2 tbsp Killer Hogs The BBQ Rub

BBQ Sauce Blend

  • ½ cup BBQ Sauce
  • ¼ cup Apple Cider Vinegar
  • 3 tbsp Brown Sugar
  • 1 tbsp Honey
  • 1 tbsp Red Pepper Flakes

Instructions
 

  • Dice pork belly into 1" cubes.
    1 ½ lb Pork Belly
  • Add The BBQ Rub to a large bowl with the diced pork belly. Toss to evenly coat. Let sit for 30 minutes.
    2 tbsp Killer Hogs The BBQ Rub
  • Preheat smoker to 225°.
  • On a wire rack, place each piece of pork belly so that there is room between each one.
  • Place rack in smoker and let smoke for 1 ½ hours or until the internal temperature of the pork belly reaches 165°. Place aluminum pan underneath the rack of pork belly to catch drippings.
  • Remove wire rack and aluminum pan from smoker. Add the pork belly pieces to the aluminum pan.
  • In a medium mixing bowl, stir ingredients for BBQ Sauce Blend.
    ½ cup BBQ Sauce, ¼ cup Apple Cider Vinegar, 3 tbsp Brown Sugar, 1 tbsp Honey, 1 tbsp Red Pepper Flakes
  • Add â…“ cup of the BBQ Sauce Blend to the aluminum pan and toss to coat evenly. Place aluminum pan on smoker and smoke for 45 minutes.
  • Add remaining BBQ Sauce Blend to aluminum pan, toss to coat evenly, and cook for another 45-60 minutes or until the internal temperature of the pork belly reaches 195°.
  • Remove aluminum pan from smoker, let cool, and enjoy!
