Grilled Peach Bourbon Spritz Cocktail

Welcome to the first post of our newly launched “Camping” section of The Sauced Spoon! Kicking it off in style with a delicious cocktail including grilled peaches, bourbon, lemon juice, and pancake syrup. It is so refreshing and delicious! Thanks to the book Camp Cocktails for the wonderful idea. Here’s our spin on it with a little more peach flavor and a hint of extra syrup (trust us – these aren’t too sweet).

We just returned from our first camping trip of the year at Acorn Campground on New Hogan Reservoir here in Northern California. It was an unbelievably beautiful weekend with sunshine, family and friends, and countless good times. Not to mention – a very competitive evening playing the card game Spoons!

After a day on the lake with floaties, beers, and our boat, we came back to the campsite to mix up some drinks. These sure hit the spot! First you’ll grill some peaches so they become nice and tender. After grilling, muddle in a glass jar. We forgot our bar tools this trip and the glass jar fulfilled our cocktail-mixing-needs! Add ice and your other ingredients, shake, and pour into lowball glasses. We had some short plastic cups that worked well. Top with club soda and you’re ready to party!

Grilled Peach Bourbon Spritz

Enjoy this camping cocktail recipe with sweet and smoky muddled grilled peach!

Servings 4 drinks

Equipment

  • Grill
  • Glass Jar with Lid
  • 4 Lowball glasses or short, plastic cups

Ingredients
  

  • 3 Peaches, halved Pit removed
  • 8 oz Bourbon
  • 2 oz Lemon Juice
  • 2 ½ oz Maple or Pancake Syrup
  • Club Soda
  • Ice

Instructions
 

  • Heat grill on high. Grill peach halves for 2-3 minutes per side. Peaches are done when there are grill marks and peach is tender.

  • In glass jar, muddle the grilled peaches. Add ice.

  • Add Bourbon, Lemon Juice, and Syrup to the jar.
    8 oz Bourbon, 2 oz Lemon Juice, 2 ½ oz Maple or Pancake Syrup
  • Screw lid on jar to seal and shake for 10 seconds.
  • Add ice to lowball glasses.
  • Unscrew lid from jar. Use lid as a strainer by placing the lid on top of the jar and leaving a small crack; enough to pour liquid through but not enough that the muddled peaches fall into the glass. Strain cocktail evenly into 4 lowball glasses.
  • Top each cocktail with club soda.
